Sweet white Trebbiano grapes of Modena, Italy are pressed and slowly cooked resulting in a dark syrup. The syrup is then placed into oaken kegs, along with a wine vinegar “mother,” and begins the aging process. As the balsamic ages, moisture evaporates, further thickening the vinegar and concentrating the flavor. Over the years the balsamic is moved to smaller kegs made of chestnut, cherry, ash, mulberry, and juniper, all of which impart their own unique character and flavor to the finished product.
